Why an end grain cutting board?
On an end grain board you cut into the ends of the wood fibers rather than across them. The fibers part as the blade passes and close back up behind it — which is why end grain construction has been the standard in professional kitchens and butcher shops for well over a century.

Care & maintenance
Hand wash with warm, soapy water, towel dry, and stand the board on edge to finish air drying. Never put it in the dishwasher and never leave it soaking. Re-oil with food-grade mineral oil roughly once a month at first, then whenever the wood starts looking dry, and follow with a coat of cutting board wax to seal the surface.
